Garlic is a world’s favourite, versatile horticultural commodity consumed for culinary, medicinal and antimicrobial purposes. Garlic is grown throughout the world but the crop invariably suffers from productivity lower than its potential, owing to several inherent and extrinsic factors, especially in developing countries like India. Garlic is an important bulb crop grown and used as a spice or condiment throughout India. It is mainly cultivated in Madhya Pradesh. Gujarat, Orissa, Maharashtra, Uttar Pradesh, Rajasthan, and Tamil Nadu. But 50% of the total production is only from Madhya Pradesh and Gujarat states. Garlic has medicinal use in sore eyes, cough, and lung diseases. It is used in vegetables and meat to give flavour as a spice. Garlic grows underground in the form of a bulb. Its long green shoots produce flower stalks called scopes, which can be eaten. Covered in an inedible papery skin, the bulb, or head, is comprised of individual sections called cloves. These cloves are themselves enclosed in a paper like skin, and the pale yellowish flesh within is the part of the garlic that is used in cooking. Garlic is easy to grow and can be grown year-round in mild climates. The raw garlic is also used in second generation products like garlic powder, garlic salt, garlic vinegar, garlic cheese croutons, garlic potato chips, garlic bread etc. It has also been extensively used as a popular remedy for various ailments and psychological disorders since Vedic period.

Huge demand for garlic powder due to its varied applications in the food and health care industries which is driving the market globally. It is also used in varied food preparations like chutneys, pickles, curry powders, curried vegetables, meat and meat product preparations, tomato ketchup, etc. Moreover, it is used in products like garlic powder, garlic salt, garlic vinegar, garlic cheese croutons, garlic potato chips, garlic bread, herbal medicine, etc. Considering the aforementioned factors, a huge demand for garlic powder is going to drive the market owing to its usage and consumption in the food and health care industries. The garlic industry is being driven by the rising awareness regarding the therapeutic benefits of garlic. Garlic retains all of its antibacterial characteristics even after processing or mixing it with other foods, making it an excellent choice for medical purposes. Also, garlic can be consumed in both fresh and frozen forms and is widely used in the processing industry.
